Shizuoka — 静岡
Shizuoka produces approximately 40% of all Japanese green tea — more than any other prefecture.
Rich volcanic soil from Mt. Fuji provides minerals that create the distinctive deep umami flavour Shizuoka teas are known for.
Shizuoka pioneered "deep steaming" (fukamushi), steaming leaves 2–3x longer for a richer, smoother flavour with vivid green colour.
Kirishima, Kagoshima — 霧島
Kagoshima is Japan's second-largest tea-producing prefecture, known for its warm climate and early harvest season.
Tea grown in the Kirishima mountain range benefits from volcanic soil, high altitude, and the heavy mist that naturally shades the leaves.
The remote highlands of Kirishima are far from urban pollution, making the region well-suited for clean, natural tea cultivation.
